I suppose you could do it with Welch's. You could probably do it with just plain old water, sugar, and yeast... but it wouldn't taste like anything drinkable on it's own. Like I said, the yeast consumes the sugars and gives off carbon dioxide and ethanol. It can sometimes yield trace to small amounts of methanol too. If you're going to use a traditional copper coil condenser to distill a wash, it's usually customary to discard the first couple of ounces that drips out as it is most likely to contain methanol which is poisonous. Artificially flavored drinks like Welch's contain more sugar and extra water to acheive their taste than naturally sugary fruit juices like real orange juice or real grape juice. Thusly, as those sugars break down, it will lose any flavor. If you use real fruit juices, it will retain more fruit flavors.

This guy has obviously never tried this before. You'll always want to have a little room at the top of the container for the early foam and carbon dioxide to collect without spilling out of the airlock or lid. Like I mentioned before, I'm always using clean 1 gallon plastic milk jugs with the lid unscrewed 1/8th of a turn so the air can force it's way out without blowing the lid off or bursting the container.

Also, 2 days isn't enough time for it to ferment well. At that point, you'll more than likely still have live yeast actively consuming sugars. It won't be as alcoholic as it could be. It's simply not done. If you drink it, it'll probably continue fermenting in your stomach which will probably make you fart like crazy the next day. I'd guesstimate that a full container of Welch's would probably take 1 week to completely ferment all the sugars, possibly as little as 4 or 5 days. If you wanted it to have MORE alcohol, you'd simply add more sugar at the beginning.

I've also found that it's not necessary to use an entire packet of yeast on 2 gallons of a fermenting wash. You could get away with using 1/4 of a packet in a 1 gallon container. As the yeast begins to work, it will actually start reproducing itself. Using less yeast does not add that much time to how long you'll want to ferment the wash, maybe only an extra 30 to 60 minutes, which is nothing.

I've got a few gallons right now that I've been fermenting since last weekend. I'm going to see how long I can keep it fermenting by continuing to add sugar to it before the alcohol content becomes so high that it kills off the yeast. Supposedly "brewers yeast" has a higher tolerance to alcohol. I'm just using regular active yeast easily found in most grocery stores. If it'll survive long enough, then I'll just continue using it for making washes I plan on fermenting longer to eventually distill.

I'm gonna try a few more things first, but eventually I would like to start making my own mead on a regular basis. It's not too easy to find in stores, especially where I live. If they have any, it's usually just one brand and usually only around Christmas time.

Distilled a particular mash I made into "rum" today... although it turned out WAY WAY more alcoholic than any store-bought rum like Captain Morgan. Only ran it through the still once and it came out about 95% alcohol. Only a slight fermented molasses flavor, maybe because the high alcohol content chokes out any other native flavors with an extreme burn. No shit, it burns your lips off your face to sip it. I mixed a little in with some Dr. Pepper (mostly Dr. Pepper in the glass) and it was still really really strong. Got about 1 liter of rum from it. Gonna try to devise a way to add a water, sugar, and molasses solution to it to dilute it to a comfortably drinkable state with a darker color and pronounced sweetness. I'm not sure how I could mix molasses INTO water and have it dissolve properly without it clumping on the bottom.

I'm getting kinda bored with trying to make distilled spirits. It's not exactly hard to do or anything, just time consuming to distill. Probably gonna try making some wine now from fresh red grapes. Haven't really settled on a particular recipe and method yet.
