If I taught guitar lessons, I would just solo for 45 minutes.

Man, that's really tough! There are sooo many truly great players and great pieces; making a short list is hard.
1) Jimi Hendrix - Drivin' South
2) Blue Oyster Cult - Divine Wind
3) Mike Keneally - Chatfield Manor
4) UFO - Lights Out in London (live version)
5) Steve Vai - Attitude Song

Here are another few of my fave solos
Atreyu - right side of the bed solo, its short but its got "twiddly bits" and sounds cool
Stair way to heaven - self explanatory!
Lynard Skynard - sweet home alabama - just cool

I've seen atreyu live, they opened for CKY. Didn't much care for any of the bands but I'm glad I went. I seem to recall they use alot of tapping in their solos.

Steve Vai, Mike Keneally, Joe Satriani, Jeff Beck, Robin Trower, Jimi Hendrix, Zakk Wilde, Eddie Van Halen, Michael Schenker -- those guys are awesome. But I'd give Yngwie's solo work a pass. He's technically brilliant, but he's very boring because his music has no soul. Or, more accurately, he plays great when other people are writing most of the music IMHO.
Oh n0c, since you mention Buckethead I have a funny story about him. I saw him play about 7 years ago in a small SF nightclub openning for Mike Keneally. Guy rips on a bass as well as guitar; he was great. But he came up to play a song with Keneally, so Keneally drops back to let him solo. Now you gotta know that Buckethead really plays live shows in that mask and KFC bucket. Well he hadn't made sure he was securely hooked up and the cable comes out in the middle of the show. I think he couldn't see it, what with the mask and all, so he assumes his guitar is dead. He takes the guitar off, throws it straight down into the middle of the stage, and stalks off in the middle of the song. Now Keneally was Zappa's last touring guitar virtuoso (he replaced Steve Vai in fact) so I'm sure he's seen it all, but it was pretty comical watching the play of emotions across his face when he realized Buckethead wasn't coming back. And we never saw him again that night, even when I was waiting around afterwards to talk to the band.
Years ago when Primus used to play a small nightclub on the Haight called the Night Break, he was playing in a band called the Deli Creeps and would occasionally play with those guys. That was awesome!

Speaking of yngwie, I bought his new solo album, and it's so brilliant it's boring. I think the songs are really meant to be taken one at a time. It's just the same old yngwie material rehashed.
