I think what granny meant was that viewing demo's through the chase-cam and in-eyes cam shows different perspectives, and the one that best tells if people are possibly hacking, is the in-eyes cam. I haven't seen the demo, but It is probably not with in-eyes cam

Maybe so, but any 31337 tourney players like Granny already know OSP can record an in-eyes demo from spectator. And the q2 source code says spectators and local computer all get the demo data from the server... So this doesn't leave much room for saying a local demo would be packed with tell-tale info that would be off-limits to spectator demos. (In-eyes spectator demos like OSP can record, for instance.)
