Well, I don't know about passes these days fer apple juice (unless you squeeze ur own) but we used to mash up cherries n blueberries we picked when we used to pickem in Michigan and stretch a big nickel (what they cost then - prolly can't find now) balloon over the mouth of the jug and it'd blow up huge with the fermentation and when it went back down it was ready to bottle - didn't use yeast tho - just the fruit n sugar......

Everything is covered in yeast spores, grapes all naturally ferment if just stuffed into a covered container. My neighbor made the best muscatel from a vine in his back yard, no yeast added, pick the grapes, crush and store the mash in a barrel.

Adding yeast is used to guarantee you have the right yeast and to accelerate the process.

Really? Did not know that. Ya learn something new everyday, hehe. But yeah, I'd imagine it'd be such a small amount of yeast that it would take longer for it get started fizzing and farting. I been kinda curious lately about using Splenda to add to a batch rather than cane sugar. I had one particular jug of watermellon wine a few weeks back that was a little funky tasting, so I poured about a 12oz glass of it, then dumped in a couple packs of Splenda hoping to sweeten it up and make it a little easier to drink. About 2 seconds after I poured it in, the shit fizzed up like alka-seltzer and ran all over the kitchen counter. I think Splenda is somehow modified from actual sugar to be calorie-free yet taste more like actual sugar than the saccharin crap that's in Equal and Sweet-N-Low. So I wonder if it would actually break down better than cane sugar to produce ethanol. I'll have to google it later maybe. I'm on my old win98 56k machine right now, don't wanna waste 2 hours that it would take with this pile of slow moving junk looking up 2 or 3 pages that probably won't answer the question anyway.

I would guess that those little yeasties got very pissed at you for giving them Splenda.

Sucrose is C₁₂H₂₂O₁₁

Splenda is C₁₂H₁₉Cl₃O₈

Ethanol is C₂H₆O

Those nice little guys piss out alcohol and fart CO₂ as they consume sugar, but as you can see, Splenda (Sucralose) replaces three Oxygen atoms with three Chlorine atoms and I am sure Chlorine farts are worse than Carbon Dioxide farts and your bubbles were either Chlorine gas or the yeasties made Hydrochloric acid with it and the bubbles were the result of the acid reactions in the mash. In any case, I think you had better not drink it.
