speliing is the frst step
omelettes need to be cooked at a LOW temperature. say med-low (3 maybe 4 on the stove dial)I add a small splash of milk to my beaten eggs, to make them creamy. I do this with scrambled eggs too and you need a none stick pan so you don't have to add all that extra butter or oil because butter/oil will just cook the outside to quickly leaving the inside EWW. (and besides, the cheese is greasy enough!!)add the egg while the pan is almost warmed up. (dont get pan to hot!!)if adding any peppers, saute them first, so they are already cooked. (makes things a lot easier.)ADD: Cheese, green onions, mushrooms, etc... right away so they sink into the egg. COVER so the omelette cooks more evenly threw out it, and cook for about 10 mins on the first side, and maybe 5 on the other.
