Ok, so i finally got some Catch The Chicken in time last night with adrenaline and some others. 

It takes some strategy, and more importantly, the ctc download.  If you connect to the server without the mod, you get the spam of missing models, etc on the screen, and often dont know how to play the game, and obviously can't follow any suggestions, cuz you cant read the text of what is being said in reply to you cuz you are missing models, hehe.  So GET the download, THEN connect to the server.

Once in, you pick one of four teams.  If i a team is empty, pick one of those teams.

The strategy:

Find and carry the chicken for as long as possible without being killed.  You cannot pickup any items except for stimpacks while carrying the chicken.  You cannot pick up health, armor, or fire weapons.  You can run, hide, or drop the chicken by pressing your fire button.  You may want to drop the chicken to pick up health, armor, or a weapon.  You may want to throw the chicken at an opponent if you know they are weak, or that you can kill them quickly.  A great strategy is to just turn around on someone following you, throw the chicken at them, and then kill them, pick up the chicken again, and carry on.  It is absolutely hilarious.  Your time starts over, so you dont want to do it near the end of a chicken run, but it may be necessary, or convenient to your situation.  Its funny regardless.

While you are chasing the chicken, you cannot harm your fellow opponents (fellow chicken hunting team).  There were several players on the server last night that just couldnt understand what the hell was going on.  They joined the server without the download, then proceeded to run around trying to ffa it up, then proceeded to wtf alot about not harming anyone, hehe.
